Weekly meal plan #8 (Mar. 6-12)

This week is a lot of busy-ness and plans. We’re going out to dinner with my parents, attending a very belated holiday party for my husband’s work department and heading out of town next Sunday, which means only four meals to cook at home. I picked fairly easy stuff to accommodate my busy schedule and cooking laziness.

Monday

Thai basil chicken over rice.

Tuesday

Mini Philly cheesesteak meatloaves, salad and roasted Yukon gold potatoes.

Wednesday

Broccoli cheese soup (using gluten-free flour of course) and grilled cheese on gluten-free bread. Also, I’ll be making double portions so we can eat it again Friday for lunch.

Thursday

Dinner out with my parents.

Friday

Shrimp Caesar salad tacos and corn. I might do these with kale instead of regular lettuce to get more micronutrients.

Saturday

Eating at my husband’s department holiday party.

Sunday

We’re heading out of town for a few days and will eat on the road Sunday night. That probably means Qdoba.
